Flavors of Peru at Clinton

Clinton is pleased to welcome Sodexo's Global Chef Program back to campus! Join us this Thursday and Friday, February 26 and 27 as Chef Piero Orezzoli prepares authentic food featuring the flavors of Perú. During Chef Orezzoli’s visit, experience the culture of Perú through its long history of cuisine featuring maize, spicy peppers, fresh seafood and fruits.

The Global Chef Program is a month-long international chef residency that provides an opportunity for Sodexo’s top chefs worldwide to travel to different countries and share their culture and authentic international cuisine with students, faculty, staff and the community.

Chef Orezzoli is a graduate of the hotel Institute San Ignacio de Loyola Chefs School, and has worked at a number of prestigious restaurants and hotel including Lima’s most elegant Miraflores Park Plaza and Hotel JW Marriott Lima. He has 25 years of experience as a restaurant manager, and joined Sodexo Perú in 2005, where he is currently Executive Chef.

“It is important for me to prepare everything with the heart, because cooking is my passion. Doing so gives satisfaction to customers and is my greatest joy,” expresses Chef Orezzoli.

There are two opportunities to experience this special event: dinner on February 26 and lunch on February 27. 

Dinner on Thursday, February 26, will feature a menu of Cocktail de Camaron (shrimp cocktail), Pollo a la Brasa al Estilo Peruano (Peruvian style grilled chicken), Lomo Saltado (sauteed beef with french fries), vegetarian quinoto with Peruvian style corn salsa, Arroz Chaufa Vegetariano (vegetarian fried rice), Arroz Zambito and passion fruit mousse. Dinner is open to the public and will be served from 5:00 to 7:00 PM at Clinton's PARC Dining Hall, located at 14 Dormitory Drive in Plattsburgh. Cost of the meal is $8.10 cash, or $7.50 with Cougar Cash. 

Lunch on Friday, February 27, will feature Chupe de camarones (Peruvian shrimp chowder), and Solterito Arequipeno salad (Peruvian fava bean, corn, and olive salad). Lunch will be served from 11:00 AM to 1:00 PM in the Cougar's Den, located on the first floor of the Moore Building on Clinton's main campus. Soup is $1.65 small, $2.35 medium, and $2.90 large. Salad is $5.20.
